Love Me long Time, Shrimp Pad Thai

Ingredients

4 ounces uncooked pad thai noodles

1/2 pound uncooked medium shrimp, peeled and deveined

2 teaspoons olive oil

1 large onion, chopped

1 garlic clove, minced

1 large egg, lightly beaten

4 green onions, thinly sliced

1/3 cup rice vinegar

1/4 cup brown sugar

4 tablespoons soy sauce

3 teaspoons chili garlic sauce

4 tablespoons chopped unsalted peanuts


Directions

- Soak the noodles in a bowl of warm water until they can separate 


 - Mix the soy sauce, brown sugar, chili sauce and lime juice in a separate bowl. When the noodles are soft, drain and return to the bowl.



- Heat a wok or large skillet over high heat until very hot. Add the olive oil, then add the shrimp and stir-fry until pink.


- Transfer the shrimp to a bowl; leave the oil in the pan. Add the garlic and onions to the pan; stir-fry until just golden. Add the noodles and 1/4 cup soy-sauce mixture; stir-fry until the noodles absorb the sauce. Add up to 1/4 cup water if the noodles seem dry, but don't let them become mushy.Add the scallions and 1 cup peanuts; toss to combine.


- Return the shrimp to the pan and heat through, about 2 minutes.


-Serve with lime wedge
