Mad for Mi Maduros: Platanos En Tentacion

First things first for those of you who may not have experienced plantains and all of their varietals and varying flavor profiles. What is the difference between platano (green color) and maduro (yellow/brown color)?


Well the difference is- when the plátano is ripened it turns yellow, like a banana, and becomes sweet to the taste.


Plantains any way you prepare them are a favourite for me so when I learned this recipe, I was over the moon delighted to now have yet another way to prepare one of my Favorito side dishes. The best part of this particular recipe is the fun name which translates to "Temptation Plantains" because they are sinfully sweet & good!


The recipe really could not be simpler, see the short list of steps below:


Ingredients Needed (For 6 servings) :

• 3 large plantains ripe

• 1 Cup panela (unrefined whole cane sugar)

• 1 1/2 Cup Water

• 1 Tablespoon Butter

• 2 cups of Colombiana – Kola Flavoured Soda or cherry coke if you cannot find the specialty soda

• 1 Pinch Cinnamon

To make maduros (aka plátanos maduros), the sweet plantains are cut down the center of the plantain, from top-to-bottom and then cut evenly into 4 pieces.


Sauté the plantains and then add all the ingredients.


Cook the plantain in low heat until you have the sauce consistency of a syrup.


Remove plantains from syrup and plate, drizzle sauce over top as desired & serve.
