Island Style Shrimp Skewers

Are you ready to make the fastest dinner on the planet?! Okay well maybe not the fastest but definitely comes close!
For so many, shrimp is a go-to protein source in my house and for good reason! Shrimp cooks quickly, you can put them in anything and they are loaded with a whopping 21 grams of protein in a three ounce serving!
Not only do shrimp cook in minutes, but they’re easy to season with the herbs and spices of your choice and can be incorporated into pretty much any meal & made so many different ways. From pasta, soup, rice, and more they go with almost anything.
For my personal sides I selected white rice, pinto beans & a homemade pico de Gallo (Snapple fact: my fav topping for like any dish including rice!) but you can literally enjoy these skewers without any sides if desired or pair them with any side your heart desires!

Recipe:
1 lb Medium shrimp , peeled, deveined, rinsed
1/4 cup Olive Oil
1/3 cup Mango Juice
1/4 cup Orange Juice
1 Lemon , zested
2 cloves Garlic , crushed
1 bunch Scallions , finely chopped
1 scallion per 4 servings
4 sprigs Fresh Thyme
1/2 tsp Hot Smoked Paprika
1/2 tsp Sea Salt
1 pack of skewers
Steps:
1.) Remove shrimp from refrigerator.
2.) In a large bowl use a whisk to mix together the Olive Oil (1/4 cup) , Mango Juice (1/3 cup) , Orange Juice (1/4 cup) , zest of the Lemon (1) , Garlic (2 cloves) , Scallions (1 bunch) , Fresh Thyme (4 sprigs) , Hot Smoked Paprika (1/2 tsp) , Sea Salt (1/2 tsp) , and Freshly Ground Black Pepper (1/4 tsp) .
3.) Add the shrimp and toss to coat. Allow them to marinate in the mixture for about 10 minutes. If you allow them to marinate any longer you risk the acid from the orange juice to start cooking them prematurely.
4.) Add the seasoned shrimp to the pan.
Cook until the shrimp is opaque and turns pink, tossing occasionally. This will take about 2-4 minutes depending on the size of your shrimp.
5.) As soon as the shrimp is cooked, remove the pan from the heat. The shrimp will continue to cook in the hot skillet. So, you’ll want to work quickly adding the lemon juice and sauce on top.
6.) Prepare skewers and begin to load shrimp onto skewer. Four shrimp typically fit best on each skewer but add as many as you'd like that will hold!
7.) Then, serve immediately, and enjoy!
