Coconut On Me Shrimp

Ingredient
• 2 eggs
• 1 cup of flour
• 2/3 cup beer (red stripe/heineken)
• 1 bag of Panko Coconut bread crumbs or 2 cups of flaked coconut
• 24 shrimp (can be fresh or frozen)
• 3 cups of vegtable oil
• 2 tbsp of salt and pepper
Directions
• Heat vegetable oil in a large skillet over medium heat.
• In a bowl, combine Panko* bread crumbs and/or shredded coconut; set aside.
• Season shrimp with salt and pepper, massaging one at a time, dunk shrimp in the flour, dip into the eggs, then dredge in the coconut mixture, pressing to coat.
• Working in batches, add shrimp to the oil and fry until evenly golden brown and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
• Once all oil is removed, plate.
• Serve with sweet mandarin chili sauce (recipe coming soon!)
